Once again I am sharing cookies made after a tutorial by Tunde Dugantsi. To join her classes and have access to everything she taught over the past years, click here.

These cookies are unusual because they are not decorated with Royal icing. It looks almost the same, but it is more of a glaze. A whole egg goes into the decorating step, first the yolk for the red background, then the egg white whisked with powdered sugar to form a suspension you can pipe. I was of course quite nervous to try this for the first time, but it worked like a charm! Tunde demonstrates exactly the consistency you are aiming for. Some of the steps are shown below, and yes, you pipe the grid free-hand!

I had a few issues here and there, nothing to do with Tunde’s instructions, but with my own problems of spacial orientation of things and a few piping mishaps. I need to re-visit the cookie that has a lace design, as I messed up a bit on the final step, but I still love them all!

I always learn a lot when I follow Tunde’s classes, they are a wonderful way to challenge myself and go out of my decorating comfort zone.
