I will not lie to you, this was a major cookie project, but I am so glad I decided to give it a try… Haniela put together a real nice video with step by step instructions to make these adorable cookies, and I made my version, choosing green and white as the basic color scheme. Felt like I had run a marathon in the end, but contrary to the real race, I wasn’t just about dead next morning.

You can use any cookie dough recipe that does not contain leavening agent, to make sure the pattern won’t get too distorted during baking. I divided the dough in two, flavored the white one with vanilla only. The green got lemon zest + Fiori di Sicilia extract, which is very bright and citric. Once the dough is made, it is all about patience: allowing the rolled dough to chill before handling it, and precision. Some photos of the progress are shown below.

I had a few issues, did not allow the dough to chill long enough in the beginning, and lost quite a bit of definition during assembling. Once all was said and done, I had enough rolled out dough to make six large cookies.

If you inspect closely, you will notice a few boo-boos, but for a first time I am super happy with the outcome. Plus, fondant pieces can be strategically placed to hide the ugliest sins. I learned a lot with this cookie project. Some of the scraps of the dough I marbled and used to make leaves.

The cookies are cute even without any decoration but I wanted to add some fondant pieces and some color.
